Danu (pronounced danoo) is an anaerobic Excelsa coffee from the Lake Chad region of South Sudan. We are only roasting a small batch of this very special microlot so stocks will be limited to a first come first serve basis and only available in 200g bags of beans.
This coffee is a variant of the Liberica species of coffee so it isn’t Arabica or Robusta and represents less than 1% of coffee around the world. It can grow in warmer temperatures than the more delicate Arabica species and at much lower altitudes. This harvest was fermented as whole cherries in sealed tanks for 48-64 hours before being puled and dried.
With the help of the fermentation we get a complex flavour with savory notes of cedar, malt and walnut along with a distinctive fruity honey-like undertone and a floral aftertaste of chamomile.
The name Danu is derived from one of the oldest Irish goddesses and ancestor of the Tuath Dé Danann who were an ancient race of deities with supernatural powers. Common qualities associated with the name Danu are nature, wisdom, and nurturing.
